Pine Nuts (Unroasted)

Chilgoza pine nuts are one of Chitral's most prized wild harvests. Collected by hand from the Pinus gerardiana forests of the Kalash valleys every autumn, each cone is hand-cracked to release the long, ivory kernel inside — a labour-intensive process that explains their premium price and exceptional freshness. Nutritional highlights (per 100 g): ~673 kcal · 14 g protein · 68 g fats (high in pinolenic acid, linked to appetite regulation) · 4 g fibre · zinc (6.5 mg) · magnesium (251 mg) · vitamin K (54 µg). The pinolenic acid content is unique to pine nuts and triggers cholecystokinin, a natural appetite-suppressing hormone. Flavour profile: delicate, buttery, slightly sweet with a resinous pine finish. Noticeably softer and less bitter than Mediterranean varieties. How to use: eat raw, toast lightly in a dry pan and finish pesto or pasta, scatter over rice pilau, add to baklava, or blend into a premium nut butter. In Chitral they are ground with wild herbs as a cooking paste. Storage: pine nuts are highly perishable. Store in an airtight container in the fridge (3 months) or freezer (9 months). Never leave at room temperature for more than 2 weeks.
